I talked about this on Wednesday and had several requests for it. I like to rub my turkey one or two days before I smoke it; and smoke it with apple wood. After about 3 hours of smoking
-stick of butter
-4 tablespoons of honey
-1 ounce of bourbon
Heat until boiling stirring constantly until it begins to thicken.
Brush some of the glaze on the turkey with about an hour of smoking left.
Allow the bird to rest 45 minutes to an hour. Brush with glaze again about half way through the resting process.
